Dr Liebig was the first to elucidate the chemistry of alloxan. He found it in the urine of normal children. It is generated by some chemical processing of some normal cell constituents (eg uric acid).It was found as a side product during an earlier manufacturing process for one of the B group vitamins. Given intravenously to animals (including man) it causes death of the islet beta cells. There is one report of it causing diabetes in guinea pigs when given orally.
Well all of that is very old news---some of it over 100 years old.
More recently bafilomycin ---produced by a soil bacteria found on potatoes,has been shown to cause diabetes in genetically susceptible mice. This bacteria grows on stored potatoes (? moist conditions such as in plastic bags).
Advanced glycation end products (AGES)are formed when food containing both sugar and protein is heated or even stood a long time in the presence of air. The 'browning reaction'which occurs is much admired gatronomically, but AGES cause diabetes when fed to diabetes prone mice.
Glycosylation of proteins is familiar to most people as HbA1c---an early step in the formation of AGES
AND SO ON
I guess some of the above will be found in modern processed and stored foods.
